Or so my granddaughter Abigail, calls it. We don’t know why but it’s adorable and so shall the name remain. BTW, it’s also known as Granola

Use it on top of ice cream or to top your favorite fruit pies (just add a bit of butter and some flour ) or my favorite, in a bowl for breakfast. Warm it up a bit or keep it cold. Either way, I love it!
Here’s what you need
- 1/2 c pure coconut oil
- 1/2 c Brown sugar
- 1/4 c pure honey
- 1 Tbl unsulphered Molasses (I use Brer Rabbit)
- 1 Tbl either pumpkin spice or cinnamon
- 1 Tbl Vanilla extract (I use my Brandy Vanilla)
- 6 c old fashioned oats
- 1/2 c each of pecans, almonds and walnuts (chopped)
- 1 c dried cranberries
- 1/2 c sunflower seeds
- 1/3 c flax seed
- Preheated oven to 350
Here’s what you do

Combine first 6 ingredients in a small sauce pan, on low heat until all melted. Once melted, set aside to cool a bit. Whisk right before mixing into dry ingredients.

In a large bowl measure out your oats. Chop pecans, almonds and walnuts and toss them in with the oats.

Measure out your cranberries, sunflower seeds and flax seed, dump them in and give it all a good hand toss.

Whisk your sauce mixture well and slowly fold into the dry ingredients until everything is well coated.

Butter 2 large baking sheets and split the mixture between them. Spread out evenly over entire pan. Bake 15 minutes then stir and spread back out. Bake 10 minutes more, turn off the oven and leave in for 2 more minutes.

Immediately dump onto large surface or oven sheet to stop the cooking.. Spread as much as possible to allow for fast cooling. It’s cold enough outside so I put it out there until completely cooled. Toss with your hands and fill your air tight gallon jar back up.
