Aka Peanut Butter balls (Nobody I know, calls them that though). These melt in your mouth, creamy confections are a Christmas must have, along with a few others that I will share at a later date.

Made with 3 simple ingredients then coated in a rich chocolate and then… well, let’s get started shall we.

Here’s what you need

  • 3 1/2  c confectioners sugar
  • 1 1/2 c creamy peanut butter
  • 1/2 c melted and slightly cooled butter
  • 1 1/2 c chocolate chips
  • 1/2 c shortening
  • 1/4 c finely chopped nuts of choice (unsalted cashews for me)
  • 2 Tbl chili powder
  • 2 Tbl ground cinnamon
  • 2 Tbl sea salt (some great exotic kind, pink, etc)

Here’s what you do

In a large bowl, sift out the confectioners sugar and set aside.

Melt your butter and slowly fold it into your peanut butter until smooth and shiny. Then pour over the top of the confectioners sugar.

With a scraper or your pastry cutter, cut everything together into course crumbles.

Grab your small ice cream scoop and scoop about a Tbl of the dough into your hand. Squeeze and form into a smooth ball. Do this for, oh about… well, until the dough is gone 😉. Place tray in freezer for about 20 minutes. While they are flash freezing, separate your toppings into easy “pinching” sized bowls.

Melt your chips and shortening for 1 minute in the microwave or in a double boiler on the stove. Stir until shiny then start dropping the dough balls in about 4-6 at a time. Completely coat, drain excess then set back on parchment lined pan.

Immediately sprinkle your chopped nuts and specialty toppings over the surface (the chocolate sets within seconds so small batches work well).

Put back in freezer until completely set. Store in airtight container or wrap in mini muffin paper and give out as yummy gifts.
