Buttercream frosting

Ok y’all, I have a confession to make. Well, not so much a confession but perhaps a little insight into my life. (Oh goody, getting the gossip on Jo!)

In September of 2014, I was able to complete the 3 requirements that my insurance company set forth, in order for them to cover a medicine that would help me stop smoking (It had been my dream for more than 3 years). It took Chantix exactly 8 days to help me lie down my last cigarette. 7 weeks later I was off the Chantix and now have been a “quitter” for almost a year and half.

Knowing me like only you do, you know I spend most of my time in my kitchen. Well, if you know anything about quitting smoking, you also know that SWEETS replace the cigarettes. Those lovely little delights added 22 lbs to my already very small, 4′ 11 1/2″ frame.

So what is this all about you ask. It’s about the one thing that I craved and still crave (controllably now) the most. BUTTER CREAM FROSTING! My favorite on everything, and I mean, I’ve tried it on everything!!!

Long story for such a perfect and super easy frosting. Butter cream is not the scarey frosting/icing most believe it to be.

Here’s what you need

  • 2 sticks room temp butter
  • 2 Tbl room temp whole milk
  • 2 Tbl Vanilla extract (I use my homemade vanilla)
  • 4 C confectioners sugar

Here’s what you do

Throw both sticks of butter and confectioners sugar into your mixers bowl and slowly combine (don’t poof your sugar, you’ll look funny 😀) speed up (4) as sugar incorporates.

Add your milk mix completely

Add your Vanilla extract mix completely. Icing should be a bit dry. Perfect for decorating cookies or you can add a 1/2 tsp of milk at a time to the desired consistency (cakes and cupcakes).

I was having a serious craving so I used it to frost these yummy mini monster cookies.

Here’s to the quitters of this world (in case you wanted to know, I’ve lost 10 pounds in the past 6 weeks and I’ve learned to control my sweet cravings)
