Banana/Cranberry Nut Bread

As most of you know, my SugarPlum ( granddaughter Abby), has a special anti-inflammatory diet. Gluten, dairy and sugar seem to affect her clearly when accidently or even mildly ingested. I have been creating recipes to feed this sweet baby and I’ve come up with my first bread recipe.

It is (get ready for this list) gluten, dairy, sugar and egg free!!! Yes you comedians, it tastes good too 😆 Y’all are hilarious!

Here’s what you need

  • 3Tbl flax meal soaking in 6Tbl warm water (5-10 min)
  • 3 ripe bananas
  • 1/2 C honey
  • 2 1/2 C pulverized old fashioned oats
  • 1 tsp kosher salt
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 C dried cranberries
  • 1/2 C chopped walnuts

Here’s what you do

Mix first 3 ingredients until bananas are smooth. Then add all dry ingredients and mix well. Add in nuts and berries. Spray a loaf pan and pour in. Bake 60 minutes at 350.

Turn pan over on cooling rack (bread will drop) leave pan in place until bread has completely cooled to room temp. A side note – because you are using oats instead of flour, it has a cornbread texture.
