Remember a couple weeks ago, when I told you to keep the “guts”? Today is the day, I show you why with something simple and tasty.
It is about that time when the cute Jack-o-lanterns start appearing and what to do with the seeds is always the question.
I say, bake um and eat um!!! Ready?! Here we go.
Preheat oven to 425Β°

Separate seeds from pulp and rinse.

Lay them out on a big pan to dry (pour onto a big towel and rub the water off if you want it done quicker).

I put 4 cups in a bowl with EVOO and Kosher salt, making sure to coat well. Cover the bottom of a baking sheet with a single layer (I did two pans at a time) and bake 15 minutes then stir and rotate pans if doing two pans, bake for another 15 min.

Pour baked seed into a large bowl. This is the time that you add your seasoning of choice, if you don’t want to leave them just salted. I sprinkles smoked Paprika on mine and mixed with my hands to coat. Let cool completely before packaging!

I made snack sized bags with the food saver.
A wholesome snack and you have now used the entire pumpkin. These things make my heart and soul happy happy!
